- PLEASE SEE ADDENDUM Lettuce Hand Harvesting - The worker will cut the lettuce head at ground level with a sharp knife to separate it from the roots and then make a second cut to remove the stem. The worker will then place it in a plastic harvesting create until it is full and carry it and place it on the nearest trailer. The worker will then get a new harvesting crate and begin the process again. Broccoli Hand Harvesting - The worker will cut 5 inches below the broccoli head with a sharp knife. The worker will then place it in a plastic harvesting crate until it is full and carry it and place it on the nearest trailer. The
