- Work within this job description does not include freezing of fish or work in and around employer's freezer functions. All work within this job description will be performed in areas and on equipment used on fresh fish that are used for in further processing and freezing or shipped as "fresh, never frozen" fish.
In all duties, employees must strictly adhere to all applicable food safety and sanitation requirements, including requirements of USDA Food Safety Inspection Service, Global Aquaculture Alliance's Best Aquaculture Practices, USDA Process Verified Program for US Farm Raised Catfish Sustainability, and requirements of the customers and employer.
Work on night sanitation crew to properly clean the plant, live receiving areas, whole fish processing areas, deheading and filleting areas, water jet trimming areas, fresh fillet grading areas, intelligent portioning areas, and manual trim areas and bins, totes, containers, and equipment used in these areas according to USDA Food Safety Inspection Service and company standards in order to prepare the plant for the next day's production. This includes operating high pressure hot and cold-water hoses and sprayers, low pressure water hoses and sprayers, chemical application equipment, mops, brooms, scrubbing pads, removal and replacement of covers and shields on equipment, removal of fish trimmings, viscera, skin, fins, etc. that were left on or in the equipment.
