- Plan, direct and participate in preparation of sushi menu items according to established guidelines on quality, portion size, presentation, and food safety. Cut, slice, and fillet different types of fish. Inspect the quality of items used to prepare dishes. Take inventory of food supplies and other products. Direct activities of cooks.
