- Job Duties:
- Live crawfish are brought to our processing plant to be boiled and processed for future consumption. Tasks associated with preparing crawfish for sale or consumption includes peeling the crawfish, which is separating the head of the crawfish from its tail and removing the tail meat; removing parts of the crawfish that are not fit for sale; inspecting the tail meat for defects; weighing the tail meat product; sort according to size; mark product with type of tail meat (i.e., wild, farm-raised, or both) and “best buy” date.
