Job Duties:
Perform variety of attending duties at mobile food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: Taking orders and serving food and beverages, preparing food and beverages, may take payment, serving customers at the counter or steam table, and may maintain cleanliness of the dining area. May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment; accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and prepare simple foods and beverages and other fair foods; wrap menu items for serving; set up dining areas; and prepare and serve beverages and deserts. The employer would position the food concession trailer in the assigned location at the event. During transit metal awnings cover the glass windows. The worker would unlatch the locks using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit the worker would carefully open the door observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery & napkin kiosk would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds. Sausage/Burgers. All the meats come prepackaged. The vegetables typically come fresh. Fresh items will be washed then placed onto a chopping board and cut into the proper size pieces using a knife and then placed into plastic food service containers pending being grilled. The meat items as well as the vegetables would be placed on a grill to cook, using tongs to place them onto the grill and a turner spatula to move them around the grill. Part of the grill would be at full heat to grill the meat items, part would be kept at medium heat to grill the vegetables, and parts of the grill would be kept at low temperature to hold the meats and vegetables until they are ready to serve to the public. The worker would use a griddle scraper to scrape off any built up residue. Lemonade In a cutting board and knife the lemons would be cut in half. See through plastic cups and lids would be brought from storage. A food service quality bin of ice with ice scoop would be placed into the work area. Workers serving lemonade would stand at the front counter communicating with the customer. After taking the order would scoop ice into a cup pick up with gloved hand and squeeze Lemon Juice into the cup using a Squeezer. Premixed sugar water would be poured into the cup and then the product would be served with lid and straw to the patron after payment. Funnel Cakes Corn Dogs & Deep-Fried Oreos. Items would be cooked in deep fryers. The workers would stand in front of the specific unit they oversaw operating. On one side of the unit there would be the raw materials such as skewered hot dogs corn dog funnel cake & Oreo batter. A portion of the batter would be taken from the container mixed in and scooped using a large ladle into the funnel cake pourer. The batter would be poured slowly into the basket, in one general location, so that strings of batter would cling together. When one side of the funnel cake is brown, the worker would use a large spoon (to drain grease) to flip the half-cooked funnel cake. When the funnel cake is fully cooked its placed into a tray to allow the excess grease to drain while keeping the funnel cake at a proper serving temperature. Same process for corn dogs & Oreos.
