Job Duties:
**RFI** The roe is first weighed, and the roe skeins (egg sacks) are placed in wax-lined pans as part of the preparation process for freezing. Once frozen, they are carefully transferred into boxes for shipping. Employees must handle the roe with great care throughout this process to ensure the quality and integrity of the delicate product are not compromised. Both machine and hand are used. The roe is removed from the fish body using machines. For pollock roe, a Baader machine is utilized, while Ryco or Nikko machines are used for salmon roe. After the roe is removed, the roe skein is separated from the remaining entrails manually by hand. The roe is both visually and manually sorted and graded to ensure consistency with established standards. The grading considers several factors, including size, color, freshness, and overall condition. **Original** Separate roe from the intestines of fish; harvest roe without damaging; sort roe as to size, quality, and color; grade roe according to established guidelines; pack roe in boxes, inspect roe after it has been frozen to confirm quality for acceptance in Japanese market.
