- Prepare whole crabs by steaming, cleaning, and breaking them down; Pick crab meat (extract the meat from the shells using knives and fingers); Remove any shell pieces and inspect the meat for discoloration, sorting it by size or quality; Weigh the picked meat to meet specified weights and pack it into containers for further processing, freezing, or sale; Clean and prepare work areas.
