- Job duties include peeling crawfish; separating the head from the tail and removing the tail meat; cleaning and trimming sections of crawfish for further processing; removing parts not fit for sale; inspecting products for defects; weighing product; preparing product for sale or consumption; marking product with the appropriate designation (e.g., wild, farm‑raised, or both) and the “best by” date; sort by size; and perform general worksite cleanup.
