- Institution/Orchard Mess Hall Cook (35-2012); Cook will prepare three meals per day in both small and large quantities using bulk-cooking methods in conventional, cook chill or cook freeze environments. Will prepare food to meet dietary needs of generally accepted well balanced nutrition guidelines, including health, religious needs, ethnic preferences and budgetary requirements: prepares meals for special diets and understands nutritional restrictions and portion size to be served; uses standardized recipes and specialized equipment for modification techniques during food preparation to achieve the prescribed or recommended textures and viscosity; prepares and cooks meats, poultry and seafood; prepares stock, soups and sauces from scratch or convenience; prepares and assembles breakfasts, lunch, dinner, sandwiches, salads and dressings; prepares baked goods, pastries, desserts and vegetables; is knowledgeable about weights and measures, hygiene, equipment handling, sanitation and workplace safety. Will coordinate food supply request and receive food supply orders; will ensure the freshness of ingredients; Weigh, measure, and mix ingredients according to recipes; Bake, grill, or fry meats, fish, vegetables, and other foods; Boil and steam meats, fish, vegetables, and other foods; Clean work areas, equipment, utensils, and dishes; Cook, handle, and store food or ingredients; Will clean , organize kitchen, appliances and dishes in Mess hall kitchen; will ensure to keep clean and organized kitchen, dining and delivery areas at all times; will sanitize surfaces regularly throughout the day.
