Job Duties:
Responsible for cooking Breakfast for 20-40 people a day from a simple menu. Tonglen Lake Lodge is a small Full Service All Inclusive Lodge looking for an experienced Breakfast Cook to join our team. Tonglen Lake Lodge is located just minutes away from Denali National Park. It is a seasonally run operation of 13 units, 11 of which are private cabins. The café, restaurant and grounds, however, are open to the public and a focal point for local artisans, community members, performers and private events. Guests on site ranges from 20-50 people. Staff includes 15-20 people. Duties will include: Menu execution for both morning bakery & café (All meals are included in the cost of accommodations for up to 50 lodge guests daily), as well as continued prep for these menu items Preparation and execution of bagged to-go lunches, as well as continued prep for these menu items. This includes cutting and cooking meat, making sauces and preparing wraps. Assists Kitchen Team with Recipe development. Assists with ordering supplies, receiving orders and maintaining proper storage. Predominately responsible for their own ingredients. Maintaining accurate inventory, with an eye toward a minimal over-wintering supply and cross-utilization of ingredients Working closely with the Chef and Manager to balance needs of lodge guests, café ambiance, and the business side of the lodge Improving efficiency in the flow of prep and kitchen set up
