Condensed Original F.a.2 and RFI Response – Combined: Perform variety of attending duties at traveling carnival food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks ... : May communicate with customers re orders; scrub counters, steam tables, and other equipment and clean fountain equipment; accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and cook simple foods and beverages; wrap menu items for serving; set up dining areas; and prepare and serve cold drinks or desserts, using drink dispensing machines. Food items provided, typical preparation and equipment used are as follows: Sausage, Hot Dogs, Hamburgers. All the meats come prepackaged. The vegetables/toppings that are grilled with the items typically come fresh. The fresh items will be washed, then placed onto a chopping board and cut into the proper size using a knife and then placed into plastic food service containers. The meat items would be placed on a grill to cook, using tongs to place them onto the grill and a turner spatula to move them around the grill. Olive oil would be poured onto the grill. Once all ingredients are cooked are served to the customer. French Fries: The worker would pour prepackaged frozen fries into a fryer, when fries are cooked fryer raises to drip the grease, then the worker would dump onto a tray, sprinkle with salt, and place into the appropriate container. Fried Fish, Fried Shrimp: The Meat Comes Frozen, Pre-Cut, in Plastic Bags. A bag of Meat is taken from the freezer, allowed to thaw When it has thawed, is opened with a pair of food service scissors. The thawed pieces are rolled in breading that is sprinkled from the container onto the preparation counter. The breaded meat items are placed into a deep fryer. They are placed into a chafing dish under heat lamp on the front counter. When a client orders, pieces are picked up with tongs, placed into the correct size serving boat and handed to the client. Cotton Candy: is a combination of sugar and flossine. A floss machine is turned on, allowed to heat up, the sugar and flossine is mixed, and when the machine is hot the worker slowly pours the mix into the center/heating element. This produces whisps of cotton candy that forms around the center of the machine. The worker learns how to spin the cotton candy cone within the large bowl. This is then slipped into a cotton candy bag and sealed and placed into a dry location for a few hours of storage until a client orders a cotton candy. Fountain and bottled drinks. The worker would take the proper size cup, add ice if required, press the cup against the lever and fill the cup. Take a lid and secure this on the top of the cup. At the end of the day, carefully clean the fountain machine. Bottled drinks, the worker would simply pull a bottle from the cooler. Provide the bottle to the server or directly to the customer. Setting up and tearing down would involve: The employer would position the food concessions trailer in the assigned location at the event. During transit, metal awnings cover the glass windows. The worker would unlatch the locks, using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit, the worker would carefully open the door, observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery and napkin kiosk(s) would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds.
