The three parts of pizza is the dough, the sauce and the toppings. We purchase pizza dough mix. The mix with ... warm potable water and olive oil is mixed in a commercial mixer. Later, placed on the work counter (dusted with the mix), covered with a clean, damp, cloth and left at room temperature for the yeast to activate. The dough is punched down by hand ... After the dough has risen twice, then it is cut using a commercial grade knife, weighed so a consistent amount of dough is used for each finished pizza. If it is to be used now, it is stretched and shaped into a round shape. Over time, if the worker becomes skilled they might toss and spin the dough into the air, helping for form the round shape required for a pizza. The dough is NOT rolled with a rolling pin as this would squeeze out the air. The dough is stretched and placed into the proper size pizza tin or pan. Sauce is ladled on top of the pizza dough. Different toppings are placed on top of the sauce using hands with gloves. The toppings are pre-shredded and/or pre-sliced. It is then removed from the Pizza Oven and placed under heat lamps on the front counter, where it is sliced and served to the patron using a pizza slicer.
The employer would position the food concessions trailer ... During transit, metal awnings cover the glass windows. The worker would unlatch the locks, using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit, the worker would carefully open the door, observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery and napkin kiosk(s) would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds.

Perform variety of attending duties at traveling carnival food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment; accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and cook simple foods and beverages; wrap menu items for serving; set up dining areas; and prepare and serve cold drinks or desserts, using drink-dispensing machines. This employer has a variety of food items that they provide (not all at a single event); typical preparation and equipment used are as follows: Pizza: The marinara sauce is spread over the dough, the mozzarella cheese is sprinkle over the sauce after all ingredients are added these are placed in an oven. Once cooked, they are served in plates and handed to the customers. Spaghetti: After the pasta is boiled in the cooking equipment, this one is added to bowls to later add the marinara sauce and mozzarella cheese. Once prepared it is handed to the customer. Lasagna: After the pasta is bolied in the cooking equipment, it is added to trays in multiple layers, in between marinara sauce and mozzarella cheese is added. Stuff Shells: The shells are boiled in the cooking equipment, once the pasta is cooked they are filled with cheese and served in a bowl with marinara sauce.
